Ultimate Gluten-Free PB Blossoms
It’s here, the cookie recipe of all cookies recipes! My favorite ULTIMATE (slightly healthier) PB BLOSSOM COOKIES! I am blown away by how thick, chewy, rich & absolutely DELICIOUS these are. 12/10 recommend these get added to your holiday cookie list ASAP!
CHEWY GLUTEN-FREE MINIMAL INGREDIENT PB BLOSSOMS:
1 egg
1 cup drippy PB, I love American Dream Nut Butter’s Just Plain Nutty, natural PB (code: KELLY10 saves you!)
1 cup coconut sugar
1 tsp vanilla
1/4 cup oat flour
1 tsp baking powder
dark chocolate mini PB cups, I love Trader Joe’s or Justin’s
PLUS extra coconut sugar, for rolling!
Preheat oven to 350 degrees. Mix peanut butter, egg, coconut sugar + vanilla until creamy. Add oat flour and baking powder and mix well until thick dough forms. Honestly, I mixed with my hands. Depending upin the type of peanut butter you use (natural will be more oily, while JIF or something more processed is thicker) the batter may be slightly crumbly, but it molds really well!
Next form balls and roll in coconut sugar. Place on parchment lined baking sheet and softly flatten just a bit. Bake for 12-13 mins. Transfer to cooling tray and top with PB cups, these will get melty so allow to cool before storing! Enjoy Xx
