No-Bake Blueberry Oat Mug Cake

One recent morning I woke up craving something sweet (shocking! since all I really crave is salty & fatty…I wasn’t quite feeling oatmeal or pancakes or a muffin, but rather a cross between them all. And then, this mug cake was born.

GLUTEN-FREE NO-BAKE BLUEBERRY OAT MUG CAKE

  • 1 egg

  • 5 tbsp oat flour

  • 2 tbsp g-free oats

  • 2 tbsp maple syrup or coconut sugar

  • 1 tbsp olive oil (coconut oil should work too!)

  • 1 tbsp oat or non-dairy milk

  • 1 tbsp mixed nut butter

  • cinnamon

  • frozen or fresh blueberries

Beat egg in small bowl and combine with all ingredients except for blueberries.

Once well mixed, fold in blueberries and transfer to mug. Microwave for one minute.

Top with additional frozen berries and chopped nuts (I used Trader Joes candied pecans!) and microwave for another minute. Enjoy with a splash more of milk and extra shake of cinnamon

Subtle sweetness with the perfect earthiness of oats, definitely will try this again with some other flour/berry combos! Enjoy Xx
