Hot Cocoa Collagen Fruit & Nut Bites
I’m a HUGE fan of Cadbury Dairy Milk Fruit & Nut Bars, like huuuuge! One of my Dad’s all-time favorites, so I like to say I got the hankering from him! Rich creamy chocolate, salty almonds, tangy dried fruit, TO. DIE. FOR. Like trail mix in a chocolate bar!
But, the older I get, the more my bod needs a little extra love. So I go thinking…how could I recreate these flavors but also give myself a little skin/hair/nail boost too?! Enter, Vital Proteins Hot Cocoa Collagen Latte and the game changed.
Keeping it simple with natural sugars too! All you need is some fridge space & a microwave to whip up some of your own, here’s what I did!
Hot Cocoa Collagen Fruit & Nut Bites:
Your favorite chocolate, for melting! (I used Lily’s Stevia-Sweetened Dark Chocolate Chips)
Coconut Oil
1-2 scoops Vital Proteins Hot Cocoa Collagen Latte mix
Raw, unsalted nuts (I went with an almond & cashew duo!)
Topping suggestions: raw pumpkin seeds, hemp seeds, dried cranberries, dried apricots, sea salt, sesame seeds, chia seeds, etc.
In a microwave safe bowl melt your fave chocolate with a touch of coconut oil. once melted, stopping in 30 second increments to stir until creamy.
Next, stir in 1-2 scoops Vital Proteins Hot Cocoa Collagen Latte mix (unflavored collagen peptides would work too!) and mix until smooth. Fold in your favorite raw nuts until fully coated in chocolate.
On a parchment lined baking sheet drop heaping spoonfuls of your nut and chocolate mixture. NOW, here’s where you can get REAL creative 🥳 top with ALL THE GOODS!
I sprinkled on chopped dried apricots, dried unsweetened cranberries, hemp seeds + raw pumpkin seeds. A pinch of sea salt too!
Place your tray of bites in fridge for an hour or until firm. Store chilled in an airtight container and enjoy!
Such an easy and mindful way to get your chocolate fix while enjoying a boost of collagen and healthy fats. I am LOVING these as an afternoon snack or sweet treat before bed, seriously addicting!
