15-Minute Cacao Peppermint Cookies
15-minutes away from fresh baked, festive cookies…YES PLEASE!
Okaaay so if you follow along on my Instagram Story you’ve likely seen me talking about how this baby (spoiler I’m 20+ weeks pregnant!) is obsessed with all things chocolate & peppermint right now! Truth be told, I have NOT been craving sweets really at all, but when I do I want something subtle and these little gems totally hit the spot — light mint flavor, rich cacao and gluten-free!
SUPER EASY CHOCOLATE PEPPERMINT COOKIES
3/4 cup melted chocolate chips, I used Lily’s dark chocolate, which have no sugar added and are sweetened naturally with Stevia!
1/4 cup coconut oil, melted
1 egg
1/2 tsp peppermint extract
1 extra large heaping tbsp cacao powder
1 cup oat flour
1/2 cup organic almond flour
dash of baking powder
toppings: chopped Trader Joe’s dark chocolate mint creams + crushed candy cane
Preheat oven to 350 degrees. Melt chocolate chips and coconut oil in microwave safe bowl, stopping to stir every 30 seconds to prevent burning. Mix in egg and peppermint extract until creamy. Add in cacao and flours, mix well until thick batter forms…I use my hands! Roll thick 1.5 inch balls and slightly flatten on parchment lined baking sheet. Bake for 9ish mins, they will be gooey/doughy, that’s okay, they firm up as they cool!
Top with chopped mint creams and crushed candy cane or whatever your heart desires. My batch made 8, which is great for just the two of us! PS: for a little extra sweetness I may try again with a full cup of chocolate chips or sub in a milk chocolate...feel free to let me know if you test out any tweaks! Enjoy Xx
