Best Ever Gluten Free Banana Bread

I know, you know, there are a TON of banana bread recipes floating around out there. Remember the start of quarantine when everyone was either baking a banana bread or sourdough? Yup me too.

And I was right there with the crowd…I tried every banana bread recipe out there: gluten-free, peanut butter, extra berries, chocolate. You name it. For a while I was pretty banana-d out. But recently I had some spotty brown bananas sitting on the counter just staring me down and I got the hankering again. So this time around I took cues from Kristin Cavallari’s True Comfort, added a few of my own tweaks and now I’ll never follow another method again! You gotta try this, so good I promise!

BEST EVER GLUTEN-FREE DARK CHOCO PB CUP BANANA BREAD

  • 2-3 ripe spotty bananas

  • 2 eggs

  • 1/3 cup coconut oil, melted

  • 1/3 cup coconut sugar

  • 2 tbsp non-dairy milk, I used almond!

  • splash of vanilla

  • 1 cup oat flour (Bob’s Red Mill is my favorite, available at most grocery stores!)

  • 1/2 cup almond flour

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • cinnamon + pink sea salt

  • mix ins: chopped mini dark chocolate PB cups, chopped walnuts (also free to sub in things like fresh or frozen berries, pecans, chocolate chips, etc.)

Start by preheating oven to 350 degrees. Mash bananas in large mixing bowl - a potato masher works wonders for this! Next add in eggs, melted coconut oil, coconut sugar, milk and vanilla, mix until creamy. In a separate bowl (or if you’re lazy like me same bowl, YOLO) mix flours, baking soda, baking powder, cinnamon and salt; combine with wet mixture. Stir well until batter is well incorporated. Fold in chopped dark chocolate peanut butter cups and walnuts…I eyeball the amounts, you can’t really go wrong with mix-ins! Pour into greased or parchment lined loaf pan and bake for 25-30 mins. Best way to check if the bread is cooked through is the good ol’ toothpick trick, if it comes out clean you should be good!

Cool before slicing, store leftovers in airtight container in fridge. This bread is sooooo moist and cakey with the perfect subtle sweetness! Highly recommend an additional drizzle of natural peanut butter. Best enjoyed while cozy on the couch, enjoy! Xx
