Soft Baked Coconut Sugar Cookies

Move over traditional butter and white sugar…there’s a new Christmas sugar cookie in town!

To be honest, when I first made these was like ‘hmm they really aren’t that sweet’ BUT I low key like that. Sometimes you just want a classic, good any-time-of-day cookie that isn’t over the top sweet, am I right?!

Oh and then I decided to jazz them up with some melted chocolate and now I’m even more hooked! The perfect addition that makes these cut-out cookies so pretty and festive!

SOFT BAKED COCONUT SUGAR COOKIES

1/2 cup plantbased butter, I used Miyokos Creamery

1/2-3/4 cup coconut sugar (depends on your level of sweetness, I used 1/2!)

1 egg

1 tbsp vanilla extract

1.5 tsp baking soda

dash sea salt + cinnamon

1.5 cup organic flour

Allow butter to soften at room temperature before creaming together with coconut sugar. Next, mix in egg + vanilla. Add in baking soda, sea salt, cinnamon and slowly mix in flour, I added about 1/2 a cup at a time, stopping to mix really well.

Chill dough in fridge for at least 30mins, although I suggest longer if you can wait, my dough warmed back up quite quickly!

Roll out dough on flour covered surface, cut out with festive cookie cutters and place on parchment lined baking sheet...I swear by my Williams Sonoma Goldtouch!

Bake in 375 degree preheated oven for about 8-9 minutes, these cookies will puff up a bit so make sure to leave some some room on the tray. Allow to cool & enjoy plain with a dash more cinnamon OR decorate!

My topping of choice: melt about 1/3 cup dark chocolate chips with a dollop of coconut oil. Drizzle over cookies & sprinkle with crushed cookie pieces & nuts.

Honestly these cookies are perfect for those who don’t want something too sweet AND they pair well with morning coffee too…just sayin! Xo
