Vegan Blueberry Pie Smoothie
Happy Monday babes! As much as I like to pretend that I love Monday, ya know that 'whole new day, new week, new opportunities' stuff, it honestly takes me a few hours to really embrace it.
But this morning I was able to get up early enough to enjoy a cup of coffee with my fave guys {Michael and Jax of course!} so that allowed me to ease into the new week with a little grace. Plus it gave me the time to mentally sketch out this morning's smoothie creation, definitely a bonus in my book!
Last night I made Dani Nemeh's ridiculously addicting and DELISH vegan berry cheescake bars {if you missed it, peep them here} and that left me craving all things fruity, summery and dessert-like. So what better way to start a Monday than with a brekkie that can double as a sweet treat?!
With my mind on macros and macros on my mind, I gave this mix a powerful punch of added protein thanks to my all-time fave Trader Joe's organic vanilla pea protein powder - you can read more about it in my latest round-up of fitness obsessions {including some seriously amazing babes who inspire me like whoa} here.
Anyway, so what did I mix up? Behold my version of blueberry pie, in liquid form!
Sinfully Sweet Vegan Blueberry Pie Smoothie:
2 scoops Trader Joes organic vanilla pea protein
8 oz unsweetened vanilla almond milk, or milk of choice
1/2 cup frozen or fresh blueberries {I used these wild boreals!}
1/2 cup fresh organic blackberries
1 tbsp organic flaxseed meal
1 tbsp creamy all-natural peanut butter {I love Earth Balance brand!}
1/3 - 1/2 cup crushed ice
Dash of cinnamon
Fresh lemon zest
Throw it all in a blender, pulse until ice is crushed fine, then allow it to blend until creamy dreamy smooth. Seriously, it's that simple. Of course I had to beautify it with a little melted peanut butter drizzle and some of those perfect little frozen boreal blueberries...because what's a Monday without a little something extra!
