2 Ingredient Paleo Pancakes

When I first heard of the concept of 'healthy pancakes' I honestly laughed out loud. Like so loud.

How you could possibly capture all that is amazing about a fluffy stack of flap jacks with just TWO simple ingredients?!

Much to my surprise this recipe is stellar, I make batch of these clean, lean and gluten-free babies nearly every week. No shame in my game. I love experimenting with different toppings and the fact that the clean up is minimal, makes me love this recipe even more. 

2 Ingredient Paleo Banana Pancakes:

  • 1 ripe banana, mashed

  • 1 egg

  • Optional: 1/4 tsp baking soda, dash of cinnamon, splash of vanilla extract

  • Even more optional: dribble of honey or agave, 1/2 tbsp hemp hearts, 1/2 scoop protein powder

I'm about to blow your mind: simply mash up that extra ripe banana and mix together with one whole egg. Heat a small pan with a spray or two of your favorite oil {I use Trader Joe's Coconut Oil Cooking Spray}, and cook up as you would normal pancakes. I cook on medium high heat and wait for the edges to solidify and bubble a bit before gently flipping. 

Keep in mind that the batter will be more runny than traditional pancake mix, but it's also normal to have some lumps from the mashed banana. I enjoy a little extra pizzaz so I add a shake of cinnamon to my batter, and if I'm feeling it, a drop or two of vanilla extract as well.The baking soda is supposed to hemp make the pancakes a bit fluffier, I'm undecided as to whether or not this really works, but it certainly doesn't hurt to add it in too!

I have played around with some additions that I highly recommend, including hemp hearts and if you're in need of some extra protein, I've also added in 1/2 a scoop of my favorite powder {which happens to be another Trader Joe's pick, their Vegan Vanilla Pea Protein is AMAZE! and so cheap!}, so have fun adding new flavors to your batter too. 

Now for toppings, because that's the best part, duh! Here are some of my favorites:

  • Warmed mixed berries - all varieties! Blueberries, raspberries, strawberries, blackberries

  • Melted almond butter and chia seeds

  • Sliced peaches or nectarines and slivered almonds

Seriously one of my favorite weekend breakfasts! All the glory of pancakes, in a simple, wholesome way :)
