Sweet Potato Pie Oats
BASIC B ALERT, and guys this is not a drill!
If you follow me over on Instagram, you may have caught a peek at my latest macro-friendly creation, which is one insanely delicious bowl of what I’m dubbing SWEET POTATO PIE OATS.
So I'm just about 4 weeks out from my first of three competitive bikini shows and naturally, with fall around the corner I am craving all this cinnamon, spicey, sweet and FALL. Thankfully, my metabolism allows me a decent amount of carbs, even while on this final prep push, so I've been playing around with loading up a little earlier in the day and this was the perfect way to do just that while enjoying so much VOLUME. I almost can’t believe I’m eating this while on prep!
Basic B Sweet Potato Pie Oatmeal
Ingredients:
1 packet {or 28g} Quaker original unsweetened instant oats
120g smashed sweet potato
80g liquid egg whites
pumpkin pie spice + cinnamon
HOW TO: I microwaved my oats in water for 2 mins, then stirred in my egg whites and microwaved in increments of 30 secs until fluffy. scooped in my previously meal prepped mashed sweet potato {just boiled potato mashed with cinnamon} and heated through. Added a few hefty dashes of pumpkin pie spice n’ ground cinnamon, swirled around then topped with my mixed powdered peanut butter and sliced almonds. Hot dayuuum, I will def be making this again, and by again I mean most likely tomorrow!

I fully believe this recipe will work perfectly with canned pumpkin as well, so play around with it and get creative, because Happy Fall Ya'll!
