4 Ingredient Protein Pancakes

Whether you are on prep, follow a low-carb diet or just want a lighter option for your favorite treat-yo-self style breakfast, this 4-ingredient protein pancake recipe is LIFE CHANGING. 

Yup, just 4 ingredients!

And did you catch that nearly-carb free humble brag. That's because this recipe requires no banana and no oats...no blender needed honestly.

This batter comes together quick and is super adaptable if you want to add in a little sparkle with things like cacao/cocoa powder, powdered peanut butter, or like me, I opted for some fresh juicy blueberries. 

Here's what you need:

Easiest Ever Protein Pancakes

Ingredients:

Heat a small pan over medium-high and lightly coat with your fave oil/butter. I love my most recent healthy find, Chosen Foods Coconut Oil Spray because it's 100% pure propellant/chemical free and soy free, which are all things that tend to mess up my digestion with continuous use. 

As the pan is pre-heating, mix your protein powder, eggs and baking powder in a bowl. Add in any of your special additions like cinnamon, berries, chocolate chips, etc. then slowly begin to mix in your water or liquid of choice. I used just over 1/3 of water, mixing until I got the perfect batter consistency. 

I then used the same 1/3 measuring cup to scoop my batter into my hot pan, and flipped once the edges of my cakes were firm. Cook 'em nice and slow and you'll be pleasantly surprised how easy they are to flip and how golden brown they turn out!

I topped my protein pannys with a little bit of creamy organic peanut butter, more warmed, melty blueberries and a touch of pure organic maple syrup.

FULL DISCLOSURE: Being that the primary ingredient here is protein powder, please don't expect your typical fluffy pancakes. These cakes will be a little more dense, but 100% satisfying in my opinion. Perfect for those watching their carb intake but want that special pancake breakfast feeling! And since the batter itself is so low carb, you can dress these babies up nicely with toppings.

Batter made 4 very generous sized pancakes, in which I ate ALL of them.

Yes, feel free to cut this recipe in half.

And yes, I think you can easily substitute in some egg whites to bring down the fat count, although I'd recommend using at least 1 whole egg if making the full sized batter.
