Chewy Gluten-Free PB Chip Cookies

Nothing is better than a warm, gooey AF chocolate chip cookie, am I right?!

NOTHING.

The more I’ve been experimenting with paleo, dairy-free baking, the more I knew I NEEDED the ultimate “comfort cookie”.

The kind you reach for just because.

The kind that reminds you of those buttery mom-made Toll House gems of childhood.

Refined sugar-free, gluten-free, minimal ingredients and ready in under 20 mins, get ready to meet your new addiction!

GOOEY Gluten-Free Chocolate Chip Cookies:

  • 1/3 cup NATURAL peanut butter; just peanuts + sea salt!

  • 1/3 cup organic maple syrup

  • 1 egg

  • 3 tbsp melted coconut oil

  • 1 tsp vanilla

  • 1 1/2 cups almond flour

  • 3 tbsp coconut flour (needed for texture, trust me!)

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt

  • 1/2 cup or so of chocolate chips

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.

In a large bowl, mix PB, maple syrup, melted coconut oil, egg & vanilla until creamy.

Add in flours, baking powder & salt until dough forms (it’ll be pretty sticky!) then fold in your chocolate chips of choice.

Bake in preheated oven for 15 minutes or until the tops begin to crackle and the cookie is stiff.

Allow to cool (IF YOU CAN) and enjoy!!

I stored mine in the fridge, a quick 20 second trip in the microwave warms them right back up!
