Creamy Collagen Oatmeal

If you follow me over on the 'Gram {@thekellycollopy} you may remember me mentioning a little while back that my hair, skin and nails have been on boss level status lately and that’s 100% due to two things: I drink a shit ton of H2O and I’ve cut my protein powders and replaced with Vital Proteins

So if you're not familiar with Vital Proteins, or collagen in general, hopefully I've piqued your interest, because it's magical. Collagen is the vital building block of our bodies including skin, hair, nails, bones, and joints. Our bodies cannot synthesize enough collagen on their own and our diets today contain minimal collagen. According to VP, here are a few benefits you can enjoy from supplementing with collagen daily:

That's why, every morning, intraworkout, I get my daily dose of Vital Proteins Collagen Beauty Water {lavender lemon, currently!} which also packs a probiotic punch keeping my gut health in check. Then I like to stir in a scoop of unflavored collagen peptides into my morning coffee or even better, my fave bowl of oats! Check out the dEATS for one of my favorite and super simple oatmeal bowls below. 

Glow-worthy Collagen Oat Bowl

Ingredients:

  • 60g oatmeal {By now you know I prefer Trader Joe's glute-free rolled oats}

  • 3oz cage-free liquid egg whites

  • 1 scoop Vital Proteins collagen peptides

  • 1 tsp Simply Organic ground cinnamon

  • Pinch of ground pink Himalayan sea salt

  • Favorite toppings: all-natural peanut butter, creamy salted cashew butter, fresh organic berries, coconut oil, chopped banana, etc.

Super easy prep, I make these in the MICROWAVE!

  1. Place oats in microwave safe bowl and cover with water. I tend to like my oats creamy dreamy, so I opt for a bit more water than what the package dictates.

  2. Loosely cover bowl and microwave on high for 2-mintues.

  3. Stir in egg whites, loosely cover and microwave again for 45-seconds.

  4. Stop, stir and continue to microwave in 45-sec increments until whites are fully incorporated and you reach your desired consistency.

  5. Once oats and whites are cooked and fluffly, stir in your collagen peptides and ground cinnamon. Add a bit more water or almond milk until the oats are creamy and well mixed. Microwave again for 30-45 seconds.

  6. Top with more cinnamon (duh!), and your favorite additions, I'm always a fan of the simple pb and blueberry combo.

That's it! Easy to prepare, take with you on the go and packed with skin/hair/nails/gut health benefits, while also providing a clean, fuel-filled source of protein and healthy carbs. 

It’s true, if ya eat good, you’ll feel good!
