Sweet Breakfast Quinoa
So I've said a few times now that I am not really a meal-prepper. But, over the past few months I have gotten much better about making big batches of things that I can easily throw together to create healthy meals throughout the week.
Sundays are usually spent making a nice meal for Michael to come home to {life of a golf pro wifey means weekend shifts and late Sunday dinners} so I use that time wisely. After a gym sesh and Trader Joe's run, you can typically find me slicing, dicing and chopping away; I love to roast up a big AF tray of veggies that I can use for morning scrambles and quick lunches. I've also become fond of cooking up a pot of grains...quinoa tends to be the winner!
Quinoa is packed with plantbased protein and is gluten free, which even though I don't have an issue with gluten, I generally feel better consuming it in moderation. So one week when I quite possibly made a little too much, I needed to find a way to use this quinoa up. And here I give you some sweet quinoa breakfast porridge!
I know, I know, you may be skeptical. You've seen quinoa served up with as a pasta substitute, in salads and all these other savory dishes, how on earth can it be sweet?! EASILY. Trust me, this is good and if prepped ahead of time you can throw together the sweetest little brekkie bowl of your dreams.
Berry Sweet Quinoa Breakfast Porridge:
3/4 cup cooked quinoa
1/2 cup almond milk, or nut milk of choice
Hefty shake of cinnamon
Dash of vanilla extract
1 cup fresh sliced strawberries and raspberries mixed
1 banana sliced
Optional garnish, chia seeds {I used Health Warrior brand, you can score 30% OFF with code REDHEADCOOKS30}
In a small sauce pan {or in the microwave if you are super short on time and don't want the extra dishes!} slowly heat almond milk. Stir in cinnamon and vanilla extract. Pour over your warmed, cooked quinoa. You can add more or less milk depening upon the consistency that you want. Sometimes I like it dry, other times I like it creamy!
Now assemble your toppings! Mash and warm your berries - again can be done on stovetop or in the microwave, most important part is that you want those babies to be ooey gooey! Pour mashed berries over your qunioa and top with sliced banana and chia seeds.
See, it's seriously that simple!

Warmed blueberries and melted almond butter
Sliced peaches and almonds
Chopped apples, figs and walnuts
Banana, coconut flakes and dark chocolate chips
