Quick Hawaiian Chicken Bake
This is one of those recipes that is constantly on repeat in our household...and mainly because Michael loves it. It makes me happy when Michael loves new recipes, because it means I must be doing something right!
What's even better is that this recipe literally only calls for FOUR ingredients, yes four! It takes less than 40 minutes to prepare, and honestly only like 5 of those minutes are active prep time. Oh yea and all it takes is a single pan or baking dish, #winning!
This recipe is also chock full of possibility, meaning you can serve it with just about anything. The first time I made it I served it on top white rice with a lightly dressed {evoo, balsamic, sea salt + cracked black pepper} argula salad. Since then, I've mixed it up, one of my favorite ways being what you see here...stuffed into a coconut oil baked sweet potato with wilted spinach and chard. So filling and comforting.
The combination of sweet, salty and tangy really is a dream. I think it all comes down to the bbq sauce you choose. I mean, I'm all for a 'pick your own poisin' attempt, but if you trust me you'll run to your nearest Trader Joe's and grab their Carolina Gold - it's sweet, smokey and the ingredient list is pretty clean!
Anyway, you're probably like blah blah blah, okay you got my droolin' now what do I do?!
Sweet & Cheesy Hawaiin Chicken:
2 organic, free-range chicken breasts, lightly seasoned with garlic salt + black pepper
1 cup of you favorite BBQ sauce, ya'll already know what I use!
Pineapple - either fresh, chopped or a small can of sliced
4 slices of provolone cheese
Fresh parsley or clinatro to garnish (optional)
1. Place seasoned chicken breast in oiled baking dish, bake at 450 degrees for 15-20 minutes, depending upon thickness {tip: baking at a higher temp for shorter time yeilds juicer meat, trust me it works!}
2. Check chicken, once it appears ‘nearly done’ top with ample bbq sauce, pineapple and two slices each of provolone cheese. Return to oven and bake for another 10 minutes or until cheese is melted and starting to carmelize over the pineapple.
3. Top with fresh parsley or cliantro and serve alongside your favorite veggies, greens or rice…yup it’s that simple!
