Sunshine Sweet + Savory Oats
If I could have any job in the world it would be as a professional food blogger. That or, PR and Marketing for a health-conscious food brand and/or restaurant. I say this simply because I would have ample time all day to make pretty plates, photo them, eat them and then gush about them online.
Real life doesn't always leave time for insta-worthy meals, and that's perfectly okay. For example, by daily breakfast usually looks like a smoothie I picked up at The Local Juice or some combination of hard boiled egg, fruit, and gluten free nut bar at my desk. I don't EVER have enough time to make a gorgeous warm meal at home...although I'll be honest, I am considering making that a resolution this new year. At least attempt to have breakfast at home 2x per week. We'll see how that goes, I can hear Michael laughing already; he knows exactly how many times I usually hit snooze in any given day.
I digress. What's important about this bowl is that I had the day off, thus allowing me to craft a perfectly composed colorful batch of loaded oats. Most of these items are staple in my kitchen, they just don't usually look this pretty together :)
Sweet + Savory Loaded Oat Bowl:
2/3 cup Trader Joe's Unsweetend Vanilla Almond Milk
1/3 cup of Purely Elizabeth Gluten-Free Ancient Grain Oatmeal
Pinch of cinnamon
Mango slices
1/2 avocado, sliced
Handful of Trader Joe's Freeze Dried Strawberries, crushed
Generous sprinkle of Manitoba Harvest Hemp Hearts
These loaded oats, literally take all of 5 minutes to make {so there's really no excuse for my lazy ass not making them every morning}. Simply heat your milk of choice in a small saucepan over medium heat, bring to a boil. Add in oats, lower and simmer while stirring for 2-3 minutes, or you reach your desired consistency. Top with all the goods.
I love the subtle sweetness that the vanilla almond milk gives these oats, plus the dash of cinnamon. The possibilities are truly endless. I've topped my oats with a runny egg before, or also coconut oil sauteéd apples. Whatever you do, these oats are your oyster...go forth and conquer.
