Easy Egg White Oats
It's no secret...I've been neglecting this blog.
I originally created this space as a creative outlet; somwhere where I could share my recipes and general love for food, while also expanding upon wellness, lifestyle changes and of course open up a bit more. So when I realized it's been a while since I've posted, rather than beat myself up, I think it's important to reflect on all the things {aka life} that have kept me from writing. So where have I been?
My wedding is 8 1/2 months away! That probably seems like a really long time still to most of you, but when you are in the thick of a TWO year engagement, anything under the one year mark is BEYOND exciting! The planning fire has been lit and things are finally heating up peeps. I recently hosted all of my beautiful bridesmaids for an evening of sips, snacks, story sharing and general love and excitement. It was so fun to introduce friends who knew me in one stage of life to friends who are still getting to know me now. Even better, we recently ordered these ultra femme convertible dresses from Lulus, so we were able to experiment with styling from the comfort of my home. They look so dreamy and romantic, definitely adding to my ultimate wedding vibe. I also got to try on MY dress for the first time. It arrived early and just in time for my parents' visit to the Cape. Putting it back on months after I first spotted it was surreal.
I've started yoga. Like really started, from the bottom. Yoga has always been one of those things where I liked the idea of it more than I actually enjoyed going to a class...mainly because I am a perfectionist and hated that I didn't know all of the poses. I would spend 1/2 my time looking around and comparing myself to everyone else and the other 1/2 attempting to breathe. I never quite found my yoga home either, a few of the local studios I tried were just okay. Then the magic of social media happened! I saw an event pop up for a local studio, Evoke, that was offering a truly beginner workshop. Four instructional classes and three additional class passes to use during or after the course. I was sold. Just stepping into Evoke on my first day, I knew this was going to be good. The moody vibe, the sweet subtle aromatherapy, the dried eucalyptus, and the immediately warm and approachable welcome from Jess. I am really hoping that this will be the first step to a long, restorative practice as well as a tool I can use to help with my high-functioning anxiety and how I cope with stress. Even better, Evoke goes beyond just yoga! I am attending one of their Book Club sessions in early Decemeber, so from now until then I will be reading Jen Sincero's You Are a Badass: How to Stop Doubting Your Greatness and Start Living an Awesome Life. #YAAAAS
So anyway enough about me and more about my latest obsession...EGG WHITE OATS.
I am a sucker for consistency, especially when it comes to breakfast. Although I am working on crafting a more mindful morning routine, the early hours are just not really my thing, so having a fairly consistent and repeatable brekkie option helps to keep things moving smoothly as I rush out the door.
The best part about these oats are that you can easily dress them up or down depending upon your mood and what flavors you are craving - and at the end of the day they are still a great soure of fiber, healthy carbs and protein. Take my simple recipe here and then check out a few of my suggestions below for how you can jazz up your bowl!
3-Minute Microwave Egg White Oats:
1/3 cup Trader Joe's gluten-free rolled oats
2/3 cup cage-free liquid egg whites
1/2 cup unsweetened vanilla almond milk {water will work too!}
1/2 tbsp organic ground flaxseed
Dash of cinnamon
Toppings of your choice, see below for some of my faves!
Start by adding your oats, egg whites and almond milk/water to a microwave safe bowl, give it a good stir. Microwave for 1 minute, stop and stir. You may start to see the egg whites puff up form into a scramble, this is good and what you want! Microwave for an additional two minutes, stopping to stir 1/2 way if needed.
Once fully cooked, stir in your ground flaxseed and cinnamon. The more you stir the fluffier and better incorporated the oats and eggs will be. IT'S THAT EASY.
Some of the best topping combos I've tried are:
Banana, berries, hemp hearts, nut butter
Peaches, grainless granola, nuts + seeds
Mixed in organic pumpkin {2 tbsp will work!}, apples, candied pecans
Pear, crushed walnuts, maple syrup and/or local honey
Give these babies a try, I promise you won't be disappointed...and you'll feel nourished!
