Cacao Cashew Coconut Bliss Bites

Back at it with the refined sugar-free goods, because ya girl is trying to heal her digestion and kick this raging sugar addicition. I’ve done it before, and believe me I’ll do it again.

When you need a quick snack, what do you reach for?

What about if you want just a liiiiitle something sweet to take the edge off, after dinner?

I always opted for just rice cakes and peanut butter but after months on end that can get a little boooor-ing, no? So it’s time to switch it up!

These minimal ingredient, no-hassle, bliss bites are inspired by the AAHHH-MAZING Lauren of Flora and Vino, be sure to check out her original recipe.

My tweaks were all based on preference and convenience (aka what I had on hand) and honestly, I think they turned out fantastic. The perfect amount of chew, natural sweeteness from dates and packed with an additional little punch of plant based protein and superfoods, à la my faaave Philosophie Cacao Magic Superfood Blend.

Whip these bad boys up next time you meal prep, and store in your fridge for a quick, no-brainer craving killer!

Plant Based Cacao Cashew Coconut Bites

Ingredients:

HOW TO: Start by combining your cashew butter, dates, shredded coconut, and coconut flour in a blender (thank you Vitamix!) and process until well combined. As Lauren notes in her recipe, this could take a little while depening upon the speed and power of your blender/food processor. I stopped a few times to scrape down the sides and keep the blades clear. Slowly add your nut milk in 1 tbsp increments at time, careful not to over-do the liquid. I actually needed close to 4 tbsp of almond milk, which could be from the coconut flour or perhaps my dates not being super wet, regardless, I slowly added until I got the perfect dough consistency!

Scoop out and form your dough into balls — my dough yielded 12 bites — and roll in additional shredded coconut. Store in an air tight container in your fridge for up to a week…if they last that long!

Easy peasy with little mess and clean-up required, which means more time to enjoy these gems.
