Harvest Apple-Pom Loaded Oats
What goes hand-in-hand with a lazy, rainy Sunday morning?
A big ol' bowl of warm oats.
I was never a HUGE oats fan, mainly because they left me feeling heavy, and not in the good 'I feel nourished' way. That was until I discovered the beauty of Purely Elizabeth.
Grain-free, gluten-free, soy-free, no sodium, probiotic, vegan...I mean the ingredient lists are insane. Even better are the flavors and recipes shared. I instantly fell in love with the Gluten-Free Ancient Grain Oatmeal; a delightful, hearty and fueling mix of organic gluten-free oats, quinoa, amaranth flax, hemp and chia. It even boasts 7g of protein and 5g of fiber.
Being that it's fall and all, I jazzed up my oats with some of the very best flavors. Take a peek at how to recreate my favorite toppings!
Cinnamon-Ginger, Apple + Pomegranate Loaded Oats:
1-2 small macintosh apples, rough chopped
2 tblsp pomegranate seeds
1 tblsp coconut oil
cinnamon
ground ginger
dollop of peanut or nutbutter of your choice
hemp hearts, for garnish {I prefer Manitoba Harvest, here}
1 serving of Purely Elizabeth Gluten-Free Ancient Grain Oatmeal {I cooked mine on the stovetop with Trader Joe's unsweetened vanilla almond milk}
Simply sauteé your chopped apples in coconut oil over medium heat. Season to your heart's content with cinnamon and ground ginger. Throw a pinch of nutmeg in there too, for good measure. Serve apple mixture over your cooked oats. Top with fresh pom seeds and a spoonful of our fave butter - I used classic pb, but almond, cashew, pecan or any other will do just fine.
