Loaded Buffalo Chicken Fries

Yup, you heard right. Basically all my favorite things on one plate. A lotta spicy and a little sweet. Feels super dirty and guilty, but it's really not. So cheat clean my friends, and enjoy every second of it, because everything is better when drenched in buffalo.
Easy Crockpot Buffalo Chicken + Fries
Ingredients:
- Whip up a batch of my Classic Buffalo Pulled Chicken, shared here
- Roast 2-3 large sweet potatoes
- I keep it simple! Line a baking sheet with parchment paper and spray a little olive or avocado oil. Chop sweet potatoes into large wedges. Season with pink sea salt and fresh cracked black pepper. Roast at 400 degrees for 20-35 minutes depending upon thickness and your crisp-level. I start with 20-25 minutes and stir regurlarly to ensure even cooking.
Such an easy weeknight meal. Utilizing the crockpot not only saves time but give you the absolute best shredded chicken in my opinion.
Now for the best part, assembling your plate!
My favorite toppings include: shredded baby kale or romaine, chopped tomato, avocado, fresh cilantro and Bolthouse Farms Greek Yogurt Avocado Cilantro Dressing; less fat, a little protein and it's amazeeee.
Not a fan of sweet potato? You can also use regular roasted potatoes or shoe string french fries...Michael can speak from experience, it's just as good!
